We present an easy interpretation of a beverage from the seasonal menu. This is a party-sized prepared mix which is packed with essence associated with Christmas time, rendering it excellent for hosting a festive gathering. Reserve the remaining citrus syrup for breakfast cocktails, sweets, or to make another batch of the drink.

Ingredients for the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
Making the Citrus Syrup: Put the listed items inside a pan, heat until it reaches a simmer, stirring to dissolve. After that, take off the heat allowing it to cool down completely. Transfer into a sterilised bottle, cap it and refrigerate it in the fridge, it will last for around one month.
Preparing the Batch Mix: Pour every liquid ingredients in a large bottle, leave to sit for 60 minutes, then filter it preferably using a fine cloth, making it perfectly clear.
When ready to serve: Measure 85ml of your batch mix to a mixing glass containing ice, and stir carefully for a minute to cool it down. Pour to a cold coupe glass or equivalent, garnish with the cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
